1.)切成小块:蓝姜,柠檬草,小洋葱,蒜头,黄姜,鲜辣椒和干辣椒(需泡水去籽)加点水搅拌成煳状。
Cut into small pieces: blue ginger, lemongrass, shallots, garlic, turmeric, fresh chilli and dried chilli (soaked n remove seeds) add a little water and stir into a paste.
2.)鸡肉切块用一点点的咖喱粉和盐稍微腌15~20分钟。
Chicken with a little bit of curry powder and a little salt marinate for 15 to 20 minutes.
3.)然后锅里下2 tbspn的油 (如果用的鸡肉块不带皮请自行增加1 tbsp的油),把步骤1的香料翻匀加入咖喱叶和柠檬叶炒香到干身(约15分钟)。
Then the next, add 2 tbspn of oil into pot (if using chicken without skin kindly addition 1 more tbspn of oil), add spices (step 1), kaffir lime leaves and curry leaves fry until dry (about 15 minutes).
4.)把腌过的鸡肉块倒入翻匀,加入椰浆,水(盖过鸡肉块便可)放一点盐让它慢慢的滚。
Add the marinated chicken stir well , add coconut milk, water (overshadowed the chicken) put a little salt and let it slowly boil.
5.)看到开始滚的时候,就加土豆让它拌入咖喱汁里面盖上锅盖用小火焖大约30分钟至土豆变软。
When start to boil, add potatoes mix with curry sauce, cover and simmer for about 30 minutes until the potatoes are soft.
6.)关火后盛出美味的咖喱即可享用!
